Soup appears in most cuisines and for good reason – it's full of goodness, inexpensive, versatile and filling. Whether they're chunky or smooth, crystal clear or dark and rich, they're always comforting. They're also a safe option for batch-cooking and freezing to then enjoy when the colder weather strikes or you've got no time to cook. Here are our favorites.

This is one of the most comforting, filling and satisfying soups there ever was. This chicken soup uses a whole bird which gives the broth an incredibly rich flavor, while the fluffy, doughy and tender dumplings are just spongy enough to absorb the savory soup.

Roast pumpkin soup with blue cheese
This Spanish take on a roast pumpkin soup combines the sweet fall vegetable with garlic and rosemary for extra fragrance, as well as extra virgin olive oil which adds a silky smooth texture. A sprinkling of tangy blue cheese and a hunk of bread on the side turns this soup into a hearty meal.

Winter vegetable soup with dumplings
A really hearty soup for a cold winter's day, this recipe packs in a lot of veg, from carrots and parsnips to beetroot and leeks. The dumplings are lovely and light, great for soaking up the broth from the soup and it can easily be turned into a vegan dish too if you swap butter for vegetarian suet. A type of fat made from refined vegetable oil, vegetarian suet is available in the US, however, if you can’t find it, grated vegetable shortening will work just as well.

Bacon and bean broth
A take on a traditional Tuscan bean soup, this warming broth incorporates filling haricot or cannellini beans and pairs them with salty bacon lardons. The soup is equally comforting as it is nutritious and while the addition of sugar might seem a little strange, it helps to mellow the natural acidity from the tomatoes and brings out a richer, deeper flavor.

Quick ramen
A versatile Japanese noodle soup with a meat, fish or vegetable broth, ramen is typically flavored with soy sauce or miso and a variety of toppings. Although the broth can be time-consuming to make, this basic version makes clever use of packet noodles. You can add any vegetables or protein you have to hand – soft-boiled egg, chopped scallions, crunchy bean sprouts, pickles, soft herbs and mushrooms work particularly well.

Roasted squash, coconut and chili soup

Tom kha gai
Silky, creamy and rich, tom kha gai is infused with aromatic galangal (a ginger-like root), lemongrass, chili and kaffir lime leaves.
